Directions for Bekah's Baseball Cap Cake as Seen in the 2001 Minnesota PKU Calendar
This clever cake is actually part low protein cake and part standard
recipe cake.
By combining the two cakes, everyone is sharing the "same" cake.
This takes the emphasis off of being different.
The brim of the cake is made of Tastes Like Devil's Food cake from Low
Protein Cookery for PKU by Virginia Schuett. The bowl of the cap
is made of either a scratch cake or a purchased cake Mix.
1) Prepare the low protein cake in a 9 x 9 inch or an 8 inch round pan.
2) Prepare the standard cake in a 2-quart glass measuring bowl (it looks like a large measuring cup). Spray the inside of the measuring bowl with PAM cooking spray before pouring in the batter. Bake the cake as per recipe directions for at least as long as the suggested bake time for the bundt recipe (the Conrads have found it takes 40 to 45 minutes in their oven). Use a cake tester to make sure it is done.
3) Let the cake cool for a short time. Turn onto a covered cookie sheet or cardboard.
4) Use the cover of the 2-quart measuring bowl as a guide to cut the low protein cake into the shape of a visor. Set the visor next to the standard cake to achieve the shape of a cap.
5) Cover the entire cake with a generous amount of frosting that is "free" for the PKU child.
6) Use a real baseball cap as a guide to decorate the cake. (Your local bakery may agree to frost the cake for you, however, you will miss out on the fun!)
7) Baseball cards make a great party favor to go along with this cake.
